Jim Clemons

Operations Manager/Brewer

Jim has been brewing beer since his college days in the early 80’s. He found the biochemistry interesting and went on to earn a chemical engineering degree. He had to put his hobby on hold to earn a living, designing explosive, fertilizer, and petrochemical plants for 20 years before returning to Kentucky to work for a local company.

“Life has been interesting to say the least, but my real passion is the science of making beer. ”

Jim has a wife and child who are the center of his life.

“I think many people go through life with misplaced priorities. I’m thankful first for my loving family, and secondly for the opportunity to do work I really enjoy.”

Although Kentucky-born, Jim has spent most of his life elsewhere. He’s glad to be back, and wants Lexingtonians to enjoy fresh, locally-made, and diverse beer options.

Xavier Donnelly is also a product of Lexington, KY. An IT Project Manager by trade, Xavier attended the University of Kentucky where he earned his bachelors in business and economics and his masters of business administration. He fell into the craft beer scene when his brother, Kore Donnelly, started home brewing years ago.

“I love craft beer and the type of entrepreneurial spirit it represents. When you make good beer, you’re creating something at the local level people are excited about and want to be a part of.”

Xavier’s background in website administration and internet marketing allow him to spread the word about Blue Stallion Brewing Co. both online and off. He’s passionate about local business in Lexington and thinks it’s a dream come true to start a business so close to where he grew up downtown.

When he’s not at his day job or working at the brewery, Xavier loves spending time with his family. He lives with his partner in crime, Karrie, and their two beautiful daughters in Lexington.

Nico Schulz

Partner

From an early age, Nico was exposed to the beer culture while growing up in a small town in northern Germany near Hamburg. He built the foundation for his interest in brewing science while working as a laboratory assistant in Quality Control, for one of the largest food processing plants in Germany. Also, Nico was able to gain unique hands on experience at a small regional brewery while living in Germany. On his gut instinct, Nico decided to move to Lexington, KY to attend the University of Kentucky where he majored in Food Science.

“The small apartment I lived in during my freshmen and sophomore year was soon taken over by brew kettles and kegs and my roommate and I brewed beer every time we had the chance.”

While attending UK, Nico traveled back and forth between Lexington and Chicago, Illinois to attend the Siebel Institute of Technology, which specializes in brewing science. Later, Nico obtained his Bachelor’s degree in food science in December 2012, but he knew opening a brewery wasn’t too far in the distance!

“I am ecstatic to introduce the people of Kentucky to the beer styles that have been popular in my home country for several centuries. I love the craft beer movement and love a good IPA but in my eyes, there’s nothing better than a delicious, easy–to-drink lager that can be enjoyed with close friends.”
